Base stats to wield a weapon you like, make it Raw (infusion).
Pump vig/End until comfortable then throw in some Vit for better armour if you want.
If you go with Raw you shouldn't have to worry about pumping str/dex for scaling and should make the levelling/learning process a little easier.
