1. Giants were already pretty much extinct by the time DaS2 takes place, and the last living giants we see in current times are hidden below the Gutter.

I would agree if it wasn't for schoalr of the first sin. Aldia and other npcs confirm pretty much that even if you refuse and let the first flame go out it will never fully go out. Emebers will always remain which will eventually get reignited. So the idea of a Das1 canon ending is moot because regardless of what you pick for age of dark or age of fire, it will eventually reignite into an age of fire. The dark souls 3 betrayal ending, the fire keeper even says as the first flame goes out that there are little embers, sparks that remain. I took that it implies it will get re lit eventually. THats why in dark souls 2, the final dlc ending, the character can choose just fuck that im not gonna light it or stay on the throne because it doesnt make a difference, you have to find someway to break the curse the fire has over humans turning them into hollows. Vendrick never figures it out or soemthing but he does give you a crown to stop you personally from going hollow through the cycles. So age of fire then age of dark ad nauseam until somebody figures out how to undo gwyns little curse of attaching humans to the flame and let the next age proceed naturally. We don't know what the new age will bring so lots of npcs give "untrue" info as to what it all means but clearly letting the sun goes out looks bad for most people in the world.
