Not a fan of Galaxy, or 3D Mario in general. Great taste though.
You should definitely check out Alundra if you're a fan of Zelda-like games, as well as the Ty the Tasmanian Tiger series if you dig 3D platformers and are looking for less mainstream ones. They're getting a PC port, IIRC.

If you like EO and have access to the means to play it, Stranger of Sword City is a fantastic recent DRPG. Ghost Trick is also a great puzzle-VN by the Ace Attorney team you should check out, I found the humour very similar.

You should definitely look into Planet Coaster, its a modern RCT clone by a lot of the same developers that's currently in alpha and so far it's looking excellent.
Tembo the Badass Elephant is also the closest thing we've gotten to a decent 2D Sonic game in years, you might wanna check it out.

In your case I wanna say you should look into I Am Setsuna, which releases this Summer in the west - I imported it a few months ago, and it was a pretty good Chrono Trigger spiritual successor. It's certainly not perfect, but it really hit me right in the nostalgia.
Also, Nobi Nobi Boy. Its by the creator of Katamari and is just as wonderfully quirky.

I love Rayman, Layton, and FE actually, so you're right on the money.
and DoS is personally my favorite castlevania, I just really like the variety you get from the soul system. SotN is great too, but it feels like all the RPG elements don't matter because the game's so easy.
