I'll never understand the crazy love for this game.
I played through it once, or I guess one and a half times since I got the pacifist ending on my first run but had to see the Omega Flowey ending first before it'd let me go back and do Alphys' lab. I got to it before there was any real hype for the game and played it all in one sitting as part of a 24 hour game marathon.
It was a fun game. The writing was goofy and funny at times and the bullet hell-esque parts of the combat was an enjoyable change from what I'm used to. I thought there was some real clever stuff in there; I killed Toriel the first time due to the scripted crit while trying to weaken her according to the game's suggestion and I was actually taken aback by Flowey giving me shit for it after I reloaded and beat that part again.
But the love for the game is fucking fanatical. Like OP thinking Sans is the best character he's ever met in video games. He was a goofy skeleton who had bad jokes and was actually the super secret deadly guy if you pissed him off. I guess he had knowledge about all the "timeline skipping" or whatever you want to call the fourth wall breaking acknowledgement of the player doing multiple runs of the game, but there's nothing especially interesting about him.

I played the prerelease demo too, thinking back it was probably just Toby viraling.
Was kinda interested but its release went under my radar, once I saw Dunkey's vid about it I decided to pirate it and just thought it was pretty ok. Hardly worthy of GoTY, even though it was a really shitty year Bloodborne and MGSV were pretty good.

All this asshurt that revolves around it just makes it even better.
However Undertale is less like a full RPG than it is a narratively driven game or "walking simulator" with some token RPG elements. The game is aggressively linear, with almost no diverging paths. At its core it's purely a rail roaded tour, a straight line that you can travel as quickly or as slowly as you like, your only real reward for exploring being the dialogue and flavour text of everything around you. And herein lies the first fault of the game in my opinion. much of the game's attempts at humour are purely to take jabs at otherwise established RPG conventions and mock them from the perspective of the in world characters. You can't sell things at a store because of course you can't it isn't a pawnshop and you're selling a used band aid. The innkeeper gives you a refund because you were only asleep for two minutes, puzzles are mechanisms specifically designed and calibrated by enemies as well as referred to as such, a jeer at ancient temples in adventure games being full of inexplicable block pushing and light reflecting sections. The game has a bad habit of finding one joke it likes and running it into the ground before adopting another and doing the same. A game that is primarily a comedy that fails to make me laugh due to repetition is an obvious hurdle to trip over, but I understand that some people found the game quite funny so perhaps I just have a different taste in comedy which is totally possible as I think Home Movies is hilarious.

A number of characters clearly remember saving and loading. It doesn't wipe virtually everything and start you back at the beginning, which is what sans wanted at the end, but has no memories of ever experiencing for himself. A reset like that may as well be the same as death for the characters living in that playthrough, so I fail to see why sans doesn't do anything until the last second.

Areas: Tutorial land was underdeveloped. Snow land was actually really good, with "You're blue now" being the climax of the game. The underground area was boring and barely had anything in it, but Undyne was a decent fight. Hotland was complete shit. The Core was literally empty.
Routes: Genocide was a chore, but the Sans fight was probably one of the only fights which was actually fun. Pacifist was shit all the way through, including the final boss. Neutral was bland, and the 'epic so scary' Flowey fight was unimpressive. The reset gimmick was interesting.
Overall, 7/10. It could have been a lot better, and I thought that while it had some cool gimmicks, it was overall forgettable. I'm really surprised that people still care about this frankly average experience. Do you people even play games?

I don't see any evidence of a grand conspiracy pushing undertale, the acclaim from the game came largely from word of mouth exchanges.

I tend to play games thoroughly. It's ridiculously short anyway. You only really need to read most of the flavor text once, so replaying a route takes very little time, and the puzzles/methods of defeating enemies don't change between routes, so that's not too bad. Most of the items and stuff can be skipped as well if you know how to dodge.
I forgot to add that I did my last pacifist run without saving. That was to see if the ending changed from not using 'determination' and to see if not dying would affect the Sans/Flowey conversations. This was before people knew all the limits of what the game could know, so I was trying to find new content. It was also probably the fastest run, since Pacifist battles are so short.

1) The graphics aren't on par with even the 16-bit era.
2) The gameplay isn't innovative at all. Instead of choosing the 'fight' option you choose 'not fight' if you are so inclined. The Persona and SMT games did the 'Talk to not fight' mechanic way before this tripe ever existed.
3) Mini bullet hell to avoid damage is a tacked-on mechanic.
4) The 'meta' storyline people go on about has been done before in plenty of video games - MGS series, Manhunt, Spec Ops, Eternal Darkness.
5) The soundtrack is ok.
