I fucking loved F/SN. It was like a mixed grab-bag of every honky anime trope I love. It's got GAR, it's got chuuni-powerlevel shit, it's got an urban fantasy setting, it's got a very interesting premise for a battle Shounen-type deal, it's got cool male and female characters, and it's got pretty decent romance. Every story resolved its conflicts surprisingly well, too. Each route managed to do a lot with a little, changing tone completely and taking the story way-the-fuck elsewhere while still maintaining at least some cohesion.
TM overall have their flaws, but fuck me if their stuff isn't some of the funnest weebshit there is.

UBW, Shirou is less of a plot-armored, logic-dodging fuckhead. The action is ramped up substantially, and the story is much more ambitious than Fate. Since you already know the TWEEST, I can't really tell you much more than that.
HF is absolutely fucking batshit. It's got a persisting Horror vibe, everything's just more fucked up in general. Shirou's plot-armor is almost completely removed by this point, and the stakes are raised even further. I can't really tell you much about it without spoiling stuff, but if UBW is Fate on amphetamines, then HF is UBW on Amphetamines.
But honestly I'm not going to sit here and tell you that Fate isn't weeb-fodder. It's definitely ambitious for a battle shounen(ish) series, but it's definitely got its problems. The pacing in particular varies dramatically, sometimes it hits the spot and other times you're tied up having to read about languorous evenings spent cooking. What it does do though is resolve all of its conflicts in a tidy way, and each cast member receives ample development for the most part. Each route varies greatly in tone, which is probably why the series has such broad appeal in general with a lot of weebs.

It's actually the writers. Almost all LNs suffer from this issue, they pad out all of the details to make the LN look longer or more full of content. This is to attract more readers, because Japan is basically like America where 99% of the population refuses to watch or read anything that doesn't blatantly spell out all the details with vibrant colors and explosions.
