You need some internal consistency. Now, depending on the source material in question, this could either be irrelevant in a fantasy setting or VERY relevant. Having body movement that makes sense is key in creating a believable creature.

The Stone Dragons turned alive when the Age of Fire started. I don't think it's mentioned clearly in the game, but in an interview Miyazaki mentions that life corrupted the Dragons by turning them alive. The Gaping Dragon got hit the hardest by the corruption, he used to be normal looking for example.

Well, to be fair, it's not really musculature we "don't understand"; wyverns (by which I mean dragonoids with four limbs total, the forelimbs also being wings before anybody tries to semantics me) make sense, that's the kind of anatomy that something like a bat has. Dragons proper like Grigori, on the other hand, (dragonoids with six limbs--four legs and two wings) make absolutely no anatomical sense, and could never exist. Suspending desbelief for magic is one thing because it's fake as fuck and you can tell yourself you don't know how it works so maybe it does under some supernatural rule or law, but Dragons, while cool, are extremely silly.

Always better than just "whack the legs." But there's no reason giant monsters can't require engaging gameplay and skill. It just requires more effort to make, but that's no different than making smaller opponents more than just whack the mob.
Dragon's Dogma is the obvious example. Grigori's fight is pretty in depth, and it's an elaboration of a type of fight not uncommon throughout the game. Shadow of the Colossus is also the gold standard of giant monster fights that isn't just the usual hack the feet.

Sixth gen consoles don't work very well on HDTVs. Aside from the input lag, stretching a 480i (or lower) image across 30+ inches of space really doesn't end up well.

Probably not the best place to start. 1's ground combat isn't that good, but I thought the flying sections were okay. 3 improved the ground combat somewhat, but most of the flying missions were boring. 3's frame rate can also get pretty shitty at times.
2 isn't really recommended since Taro didn't direct it and the story is generally seen as the least interesting in the series. The scenes with Caim and Angelus are still pretty good, though. Combat in general is kinda better, too.
Also maybe try Nier. It's a spin-off, but it's also pretty good and its getting a sequel.
