For salad sauces I usually prefer curd, it's lighter in taste but gives you a creamy texture. For potato salad, mayo can be good, but a mainly vinegar-oil-salt based sauce can be really nice too, as it gives an acidic kick that goes well with the starchy flavour of the potato slices.
On sandwiches, I prefer something like yogurt sauce with chives in it. Also, smearing the bread with pesto and/or rubbing it with garlic really gives it a nice kick, and basically makes mayo obsolete since mayo simply does not go well with those flavours as it's too overpowering.
