from what I recall, with V1 people were mainly complaining about the pacing, which really was terrible, no matter how you look at it (Weiss turning from Ruby's arch enemy into her bff within the same episode, an episode that was, what, 10 minutes long?), then Jaune getting more focus than the actual team the show was named after, too many new characters being introduced too fast and not enoug backstory given for the already established ones...
V2 was just a big, confusing mess. the writing got a bit better, but the animation outside of the fighting scenes got worse. Neptune being Neptune, Weiss being interested in that idiot for no good reason, a somewhat nice Bumblebee moment that got cut short, as two women dancing together was apparently too awkward to really put on screen, but Jaune dancing in a dress was just the right amount of cringe to dedicate a full dance choreography to it. I'm sure there was more, but I don't really want to remember any more without getting drunk first.

Hell, the entire SEASON could have been excised and very little would have changed. That deeply cringey dialogue during the mission about why they all want to be Hunters. The fact that we had to use World of Remnant to explain things, and that those two-minute animations took another week, so the entire season went even slower. To be fair, that was probably used to give them more time to flesh out the episode. You can't really see it in V2, but it's much more evident in V3. People often mentioned how their decision to keep up with RvB's "one episode per week" pace had negatively affected the production early on. I think either Miles or Kerry even commented on one of the episodes, saying he's "satisfied with how the final version looks", because he hadn't actually got the chance to review the episode before it was released. Meaning there was probably no QA whatsoever in those first volumes.

I don't think the creators claimed they were in a relationship in that scene, just that everything was in place for them to become a couple after the show ended, and that was their intention. They had to specifically state that in blogs because people could look at the ending and assume they were still going to be just good friends. In an ideal world the show would itself show them becoming a couple and everything that follows, but that's not going to happen until society becomes more accepting of homosexuality.
Still, we're hoping the comics deliver on that front.

No, that would've never happened. The Legend of Korra is a show about an Avatar kicking bad guys' asses, not a SoL about two grills in love. The best you could've hoped for is an on-screen confirmation, maybe some intimacy, but that's it.
