I can't go south at all during the war of the five kings because Victarion and the Ironborn hold Moat Cailin, unless I was to ride to White Harbour to book passage down south.
If it's after the War of the Five Kings, that means passing through Moat Cailin while Bolton men hold it, and while they're the overlords, that would still be terrifying.
And even if you got south of Moat Cailin, the south is full of banditry, outlaws, burned crops and soldiers sacking and raping villages and smallfolk.
In the scenario that I wake up in a time of relative peace, I guess I would go south to King's Landing or Oldtown, and enlist for the City Watch. Comfy enough job, don't have to swear any vows of chastity and you can send your earnings at any tavern or brothel.
I'd also be okay with joining a merchant crew as a sailor or a porter. Would love to explore the open seas and visit exotic ports.

Not often, really. "The Old Way" is a largely dead practice, and only really done at times of war or on rare "right of passage" occasions by the Ironborn nobility, and only really in areas that pirates are prominent anyway (iirc when Balon was young he went reaving in the Stepstones).
Most Ironborn have learned to practice farming and trading and slowly adapting to greenland ways of life because they keep being BTFO when they try to raid the mainland. It's only really the Greyjoy family, especially Balon, Victarion and Aeron that seem to be the most passionate about bringing back this culture. Most Ironborn live in Harlaw, Botley and Blacktyde lands where they're more accepting of greenlander customs.
I would be wary of pirates and slavers though, yes. If you get marooned off the coast of Slaver's Bay, chances are you will end up in chains.
And if there's any Ironborn ship I fear running into, it's the Silence.
