Why would Melisandre join the lightning lord?
Those "outcasts" serve the same god as her, but they hate the lannisters, so they'll probably fight against them in the final battle. However, Melisandre isn't going to be fighting with the Starks anymore, so she can't be on their side.
But she can't join Cersei because she doesn't believe in that god. And Melisandre supported Stannis and tried to siege king's landing. Cersei wouldn't allow her in.
So what is she going to do? No one wants her on their side.

I was re-watching some of the scenes Melly had with Stannis, especially post Blackwater and thinking that we've already seen her counsel a King. We've already seen her be the one that burns people at the stake. We;ve explored how she thinks, how she deals with none believers, etc. Jon's never going to go for all, so what purpose does she have? She's already brought him back from the dead, and I think that was the only reason she was there in the first place. She has other more interesting stories than to be on a war counsel with Davos and another King again.
Besides, D&D are setting it up so that Bran will become Jon's spiritual/magical advisor.

For what reasons Dany is a Mary Sue, exactly ? She's a Targaryen descendant. Her powers are reasonable for someone who descent from Aegon and friends.
She had been at the bottom a few times, made a handful of mistakes. While things do ultimately work in her way, it was reasonable to believe it would not - a Mary Sue succeeds from start to finish.
Lastly, she's also very good at making friends and allies, which is her only diplomatic skill with acting stronk.

The Night's King was a different character in the books, he was said to have been the Lord Commander of the Night's Watch long ago and was seduced by a female Other and ended up bringing her across the Wall into the Nightfort (one of the abandoned castles on the Wall) and ruling there as a king with her as his queen. There are all kinds of horror stories told about his reign, until one of the Starks put him down by forming an alliance with a King Beyond the Wall.
