HBO's next big budget sci fi fantasy adaptation is Westworld, which sounds like it's got serious problems.
After that is Watchmen, which is honestly how it should have been adapted to start with. But that's more a prestige miniseries than a big fantasy epic.
I know there's a guy out there who's saying he's writing "the black game of thrones" which could be pretty awesome, if like GoT it takes real world iconography and then just does its own fucked up thing with it.
It also seems like everybody wants HBO to do a big budget Dune series, but I don't think that's actually a good idea, cool as it might be.

Whether they'll be any good is anyone's guess. I can't see how they'll be able to WoT any justice, but Kingkiller shouldn't be difficult to adapt.
