So Arya at the end of this episode is basically in the exact same position she was in at the end of last episode - wounded, and running away from the Waif. Why not compress her storyline, have the attack, Arya running away, and killing the Waif in the same episode? Why bother with stretching it out, and adding the Lady Crane scene? What did it add to the story/characterisation?

Think about it. GRRM knows that no matter what ending he makes, it will never be perfect and many people will hate it so how do you make sure that doesn't happen? Don't end it.
It's perfect, genius even. All he has to do is drop so many hints to so many different endings throughout his next book (the way he does in his other books) and then never end it. Then he'll die and have his notes burned.
People will spend years trying to figure out what the ending was going to be by toiling through his texts to make try make sense of all the foreshadowing and hints. Hundreds of theories will pop up and be discussed and books will go down in history, although for slightly bad reasons.
That way, everyone gets the ending they want and the fat man will have the last laugh.

The entire fucking city is at stake and he doesn't even bat an eye at telling her to fuck off. He should have considered a few things:
1. The people will likely blame the seven if the Tyrell's actually follow up on their promise of starving the city
2. There are a shitload of parallels between him and the Lady of Thorns
3. If the Tyrell's make good on their threats, an entire city will suffer terribly
And on top of all that, they haven't arrested EVERY SINNER IN THE CITY EVER which means he's just making examples of people with power, which is likely just to gain power.
I agree with much of the stuff he says, and I nearly came when he BTFO Cersei again and again, but he's definitely not without his faults.

I have a feeling there was some under the table deal, and he fed them details that no one else knows, which helped them guess what no one else has guessed.
Although, having read the books and seen some of Gurms other writings, it doesn't seem like he really has an idea of what he's doing and GoT is the equivalent of walking down the street one day just to find a golden goose. He probably didn't know what he was doing picking them.
