It's interesting because those deleted scenes delve a bit into what would be the plot of Terminator 2. To prevent the "bad future" from happening.
Personally, I always preferred the slightly more pessimistic yet still hopeful ending of T1. The bad future is still going to happen but humanity will win in the end regardless.

Because they don't have tv or any kind of media so stories about the past would have been told a lot more and people would have been a lot more interested in them. He probably had a pretty accurate mental picture of pre war society from hearing so many stories about the olden days. Plus he was spec ops so would have been briefed a lot better than the everyday pleb.
