Margaery and Loras didn't know about the Ser Robert Strong yet either. Loras was in great form when he was arrested, but I don't think he would have been able to beat Undead Mountain then. He definitely can't after all that time without practice and withering in his cell.
Even if The Hound still is alive, we have no inclination he's back in KL in time for the Trial by Combat. I do think he'll fight the Mountain, but just not yet.
Cleganebowl is both alive and dead. There is tons of hype and evidence that there is going to be a confrontation and redemption arc for The Hound, but critics of the theroy have a point that his story is at a satisfying conclusion are also correct. It would be unnatural to his story to pop out of nowhere for a duel for the ages, especially with his body still affected by his injuries.
What critics of Cleganebowl don't realize is that we are about 2/3 or 3/4 of the way into the story. This is not the final stage of the Clegane arc. Sandor is at rest figuratively, but (as Godfather 3 puts it about unfinished business) just when he thought he was out, it pulls him back in. If the Trial is coming this season, Sandor won't be ready for it...but it or another event could be the catalyst that fuels his fire.
