They tried to have him wielding one sword, but the choreographers said they couldn't properly convey how much better Dayne was supposed to be than everyone else if he was using only one blade, so they compromised by having him dual wield. It's be pretty much impossible to convey to the audience and anyone who doesn't know swordfighting, how good Dayne is with just one sword especially when up against minimum of 3 dudes coming at him cause no way if it was the original 7 vs 3 would they not decide Dayne's the bigger threat and focus on him more.
Unless you want the fight to be more unrealistic with a dude with one sword managing to dodge 3 dudes who could easily gang up on him cause he's clearly outnumbered and any two can attack while he's attacking one or could attack all at once and definitely take him down, dual wielding makes sense
