I just assumed the show would end before the books were all out, and i think it was known form the beginning which is why is was clearly stated that GRRM let the GOT writers know where it was all heading. I feel like the success of the show only served to make GRRM more lazy knowing that whether it's by his hand or not, the story is gonna be told. At this point not as detailed, or word for word like the books, but the broad strokes are gonna be clear by the end of the show.

In the books the wolves are more like literally the current status of the stark kids, like, it means if they're alive, dead or soon to be dead.
GRRM regrets killing sansa's direwolf because of it. But you could say that it symbolizes her lack of connection to the stark family. She was never truly a stark, so her wolf is dead. There is also rumours that Sansa is gonna die just because her wolf is dead.
