Well, Remembrance because it's pretty widely regarded as one of the best and possibly THE best novelisation, it fleshes out the story a good deal while still managing to tell it at a brisk and propulsive pace. You even get a glimpse inside the mind of the Special Weapons Dalek, among other things.
The Fenric one is less well reputed, but it lets the author bring back some of the themes and characterisation that had to be cut from the TV version, which can't not be interesting when it's already one of the best serials of all time. It also contains a very interesting epilogue pointing at the future of Ace after she left the TARDIS (which the VNAs later incorporated).

To add to this, I'd say read the Ghost Light novelization just because it's a notoriously confusing story (it was supposed to be a four-parter, but they cut an entire episode at the last minute, mostly exposition) and the book medium let Platt tell the story he wanted with no length constraint. In general the Season 25/26 Targets felt like a trial run of the deeper storytelling the VNAs would get into.
