The best OC scenes are the kind of quiet, character-developing filler that D&D added while still getting the hang of how long an episode needs to be.
The Theon letter scene is great both to show how he's conflicted, and just from a cinematography standpoint.
Another great OC: Bobby B and Cersei talking about the Dothraki, Lyanna Stark, and their marriage, although it's hard to call any scene with Mark Addy "quiet."

Ramsay is introduced at the same time Theon becomes a POV character. In many ways he is kind of an inverse of Theon; Theon's dark side perhaps. He's a manifestation of Theon's insecurity.
Theon doesn't really feel like a Stark, his adopted family, though he wants to be one. He is also rejected by his real family, despite trying hard to live according to their way of life. They're both bastards in a way.
In the books this is all very noticable because Ramsay is literally the little devil of Theon's shoulder telling him to do wicked things for personal gain. First he offers to save Theon from disgrace when he can't find Bran and Rickon. Then he keeps his secret, killing off his own men. Again when things seem hopeless Ramsay offers a way out... for a price.
Much later when we are reintroduced to Theon, along with Ramsay, we see a Theon who is completely entombed and emasculated by his sense of guilt and abandonment. The cruel, ugly, lumbering Ramsay mirrors Theon again who is himself now ugly and lumbering and remorseful for his own attempt to embrace cruelty.
However over the course of his story in A Dance with Dragons Theon starts to come to terms with his guilt and his wounds. At the end he is able to remember who he is again underneath, even if he's been mutilated and tortured. At the same time he finally escapes from Ramsay.
So to me it seems like the Ramsay Snow character really only exists represent something to Theon. He has never really had any connection to any other POV character. So once Theon escapes... he might as well be killed off.

Now with the show they do add in Sansa interacting and being raped by Ramsay, so now she has a connection to him. However you still could have had Ramsay torn apart by his own bitches in S6E1. Have him lead the hunting party and find them and when he sics his dogs on them he discovers they have become more loyal to Theon than to him.
He dies horribly, Roose has a new son, God's in his heaven, all is right with Westoros.
Anyway. I kind of do want to see SANSA take back Winterfell and kill Ramsay and/or Theon kill Ramsay. It would be predictable and cliche, but I'd like to see Theon leading a small force of Ironborn at the Battle of Winterfell that saves the day for Sansa. It's the ultimate reversal of his original betrayal.
Sure, Jon Snow has a flimsy connection to Ramsay in book and the show because hes know that he has brutalized his sister (or who he thinks is his sister), but he's still never even met the guy. I'll be glad to see Ramsay die if Jon Snow kills him, but won't carry the same weight as it would if it was Theon or Sansa.

Sansa & LF meeting leak info:Littlefinger shows up in the brothel after sending a message to Sansa to come there. Sansa takes Brienne with her. She confronts Littlefinger and is really cold with him and rejects his aid. He's very penitent and seems to me to be truly sorry. He tells Sansa about Blackfish having retaken Riverrun before he leaves, and tells her to contact them so she could find some people who'd be loyal to her and not Jon. Later on in the ep Sansa doesn't tell anyone she's met up with Littlefinger and lies about how she found out that Blackfish has retaken Riverrun (she says she heard it at Winterfell). Perhaps she doesn't want to expose Littlefinger to Jon.

Not to mention that it was really just an unnecessary plot device since the previous scene had already established that Stannis' men were starving, his horses were dying, his food was running out, and men were deserting. There was no need to have Ramsay run some covert mission to burn his supplies. If the snows kept up for just another week or two then Stannis would have been in the same desperate situation.
Really the 20 Good Men thing served no purpose other than to make Ramsay feel like a Mary Sue.
