I just finished In The Mood For Love. One of the most beautiful films I've seen in a while, but I think the plot started to fall apart afterChow leaves for Singapore, and the time skip happens. I'll never get why stories feel the need to show the passage of time after the story effectively ends, as if I didn't know whether or not life would go on. Natural end of the movie for me felt like when Chow 'rehearses' saying goodbye.

I disagree with this wholeheartedly. I think everyone grows up watching movies and film, and some people might get more into it than others growing up. But it's never too late to decide "I want to start thinking about the movies I watch more."
It wasn't until college that I started thinking about film more as art than entertainment. My idea of high brow was just whatever Oscar winning drama movie came out that year. Now I mostly watch international films and independents.
Sometimes you just don't get exposed to stuff.
