Sauron had excellent air surveillance and defence - his Eye could see flying things coming from miles and miles away, and he would be able to swiftly deploy winged Nazgul to intercept any flying attackers. The only way into Mordor was by stealth, on foot, taking advantage of ground cover (NB if anyone cites the eagles unwillingness to intervene in worldly affairs as a reason, they suck dick)

The short answer is that they don't and you can blame Peter Hackson for introducing this cringe worthy line. Having said that, orcs are capable of social organisation and it's not beyond the realms of possibility that there are canteens where at least a limited choice of different foods is offered to paying orc customers

Also, chracters in the book repeatedly ask "who is Tom Bombadil"? suggested there is an answer, even if it is not known. He is probably a Maia or even Ainur.

Just throwing this out there, but there's also probably religious meaning. Although Tolkien wasn't a fan of the type of allegory of Lewis, his Catholic faith is deep in LOTR.
