In regards to a potential gay (or bisexual) character emerging- I can see three contenders in the current cast:
Emerald: can get very affectionate and possessive about Cinder. This could, of course, be entirely platonic, but it's easy to see it as something more.
Scarlet: a male fan was holding up a love sign for him, in SSSN's tournament fight. Not exactly concrete evidence, but possibly a dash of foreshadowing.
Neon: called Yang cute in their fight. Might've just been more of Neon's trash talk, but it seemed to take a different tone to the rest of her taunts.
Can anyone see any other possibilities?

The only way this wouldn't ne awful is if Emerald was a double agent for Salem. Her devotion to Cinder a blatant fabrication, with Emerald being there to enact more subtle plans for Salem while under the guise of Cinder's devoted little helper.
Cinder is too much of a power hungry loose cannon, but she DOES serve a purpose in Salem's grand plan. It makes sense for Salem to have someone close to her to gurantee that Cinder doesn't get too big for her britches while simultaneously nudging things in the direction Salem wants them nudged. Someone easier to manipulate and command. Someone who's also been shown to be a very deceptive actor herself.
And then if Salem wants Cinder to fall, it's as easy as having Emerald slit her throat while she sleeps.

But that's true. Blake and Sun don't really have anything in common besides both being Faunus, and there isn't any possible interesting character development that can arise from such relationship. "Don't run away from your problems" had been discussed to death already.
Blake's character would benefit from a relationship with a human, particularly the one with strong dislike to Faunus. And by "relationship" i don't mean strictly romantic relationships. We've seen it with Weiss already (although to be honest, I miss bitchy racist Weiss from Vol. 1).
Another possible route is to have a character try out going out with somebody, realize it's not for them and break up without finding another partner, basically staying a lone wolf forever. That's something that rarely happens in the popular media and it would also allow for some decent development, although it probably wouldn't fit Blake. Maybe in a "I don't want to hurt you so I'm leaving you" kind of way, but that's different from "I don't think long-term relationships would benefit my style of living".

Right now, they're at the point where it's possible to have them remain close friends without getting into break up drama nor prolonging the relationship, with maybe a brief talk to establish their status. Going further will only waste more time for, as I said, an underwhelming payoff. You're right in saying that it hurts no one, but in the end, it's going to be a safe, boring romance. Not sure whether it's going to be long, with Blake's suicidal tendencies, though.
Characters need their views to be challenged to develop, and pairing up two Faunus with similar thought on humans and other Faunus doesn't provide any source of decent drama or development. Only thing I can see Sun helping Blake with are running away (which had already been dealt with, what, twice?) and self-sacrificing/acting without considering the feelings of other people. But those two don't need a romantic relationship to be dealt with.
I mean, I'm not going to hang myself if Eclipse happens. But I'd rather them steer clear of any romance at all (with the exception of maybe Renora, since it's already more or less established and ready to provide your daily dosage of unrequited love angst) until at least volume 6 or 7 and spend that time fleshing out characters, their backstories, motivation, and so on.

Oh my, I like this prompt. Yang is probably extra nervous about the baby, considering her history with moms.
I would of course make her a nice breakfast, and help her through her daily exercises. After that, we'd go to the park and talk about baby stuff.
After a few laps and some ice cream, she would arrive home to a big surprise. While we were out, I got Auntie Rube to help clean up the house, bake a cake, and pick up a cute, pink/blue crib. We all build it together, then wrap up the day painting, listening to her favorite playlist, and just having fun.
