Grey Knights vs Daemons is kind of an outlier in that the former have always had a huge advantage, though Daemons are pretty good against all Marines armies in general.
Usually, no army has a clear advantage over the other, even with fluff background. There are certain units/characters where their hate for one faction is so great that they do get buffs against said faction, but these are usually minor or if not, you're still usually paying a high points tax to get access to these abilities.
For example, Tau's Commander Farsight has Preferred Enemy (Orks) which means he is more accurate and better at wounding against Orks. However, he's an expensive character and restricted to weapons that is not 100% optimal against Orks so he's not a must-have versus them.
Speaking of Farsight, his sub-faction of Tau do get an army-wide bonus against Orks. Here, the Tau's bonus is slightly better close combat against Orks, an area where Orks will win anyway, just less easily. It doesn't really make a difference, especially since Tau should always be planning around shooting anyway.

Tau, because I can freak out tau players with the amount of firepower I usually bring with my Raven Guard/Raptors. My typical anti-tau list includes 20 plasma guns and 14 Lascannons, many of them getting infiltrate. A Tau army that brings enough missilesides to take out all the razorbacks doesn't have the firepower to kill my marines or my Deredeo, and a tau army that can threaten the Deredeo and marines will just get laughed at by the razorbacks by sheer numbers.
It's hilarious now, because my local Tau player has actually changed his entire meta from gunlining, to surgical strikes and riptide spam. Simply because I can out-shoot his army with a portable gunline.
Last game I played, I had ONE HUNDRED marines, all with plasma gun and plasma cannon, sitting cozy in my deployment zone. He had 5 Riptides and 6 squads of deep striking crisis teams.
The riptides stayed way the fuck away from my army, and the crisis suits deep striked into his own deployment zone so they wouldn't get eaten alive by plasma cannons. We ended up having a 5 turn long stand-off as both armies waved dicks at each other, before we mutually decided to concede. If either side moved up, it would get toasted.

The worst things I've seen so far were multiple Grav bikers squads, Double Flyants with two TL Devourers each, and Ravenwing bikes with 2+ rerollable jinks with a FnP icing on top, all of which were dropped after a single game to not be an asshole.
I ain't certain if not getting to play against WAAC faggots with Tau/Eldar/Necron/SM netlists counts as playing 7e, but I using a 7e BRB if that's what you're asking.

I play Raptors too, so I also have the option of rending his suits to death if they get within 24". Last game I played with him, a single 170 point tactical squad with 8 bolters, plasma gun, plasma cannon, managed to kill a riptide in only one turn of shooting by good rends.
My hardest counter to him is of course the 30 devastators with Infiltrate using Ignores Cover Grav-Cannons. Which he totally deserves for being the kind of person that brings multiple stormsurges to 'casual' games with new players, while simultaneously complaining that they're overcosted and shit. So he's pretty much the /tg/ avatar of tau-faggotry.
So far though I've only been stomping him into the ground with 20 plasma gun lists, he hasn't pissed me off enough to truly come out and take my gloves off. I'd rather he be surprised when I next show up to a tournament with the aforementioned grav-cannon list.

Generally, you can take any mix of factions that you like, so long as the minis from each faction fit into either a Combined Arms Detachment (Generic roster that include an HQ unit and some Troops), Allied Detachment (Generic allied roster of an HQ and less troops), or a Formation (listing of specific units for some benefit). Allied factions, like Space Marines and Imperial Guard affect each other with special rules and Independent Characters can join each other's squads.
So what is the current state of Independent Characters with Infiltrate? Do they confer it to a unit they join as per the rulebook? Or is it like the last FAQ where characters can only join other units with infiltrate? This is just too much of a clusterfuck for me.

GW can be so silly sometimes. I get my first Guardsmen Command Squad and look at the sprue. This thing has not one, not two, but three different torsos for the platoon/company commander. Not to mention little bits and bobs that let me make it look like the commander's reading a map, or holding a cane, or has a servo skull floating behined his shoulder.
But.
When I look for the melta's I need to kit out an anti-tank team, I find only one. Yet the codex says I could take four on this squad alone! So the sprue designer at GW figured each squad should get lots of fluffy junk to personalize your squad, but also decided that it was unlikely the customer would need more than one of any particular type of special weapon in the squad. Whoops!

This game would be great if it sold you books with factions lore and art only. Then, its also part binder. GW would then sell additional booklets that go into the binder like removable dataslates.
This way you can get a constant updating meta without having to wait for a whole new codex to be released. Also, any new formations can be bought at the local GW store. You can even do it like magic where you have foil art or some shit to verify that its GW product.

Haven't the slightest idea, leaning towards space marines, honestly like the Ultramarines but I can get DV for about 30 bucks cheaper than a 500 point Ultramarines army with a codex and rule book.
DV is 85 bucks, the army alone without the tacked on 120 because I have to buy a 3 set collection for the rules plus another 58 dollar codex.

So, I'm running renegade-styled Rogue Trader campaign, and one of the players wanna join as Dark Eldar. I'm still not sure how to not turn this event into a bloody carnage.
DE is a half-born Kabalite, who earlier served in the crew of decadent corsair prince, and had her reasons to leave along with void-dreamer. They will have some shiny trinkets which mon-keigh will definitely love, and void-dreamer knows the warp routes in local sector, so I think it is really possible to negotiate.
Space Elfs, on the their side, will get a way out of servitude to their decadent boss, who's really hated by whole Webway, but I'm not sure if they have real reasons to stay in mon-keigh crew for long (I mean, 5-7 years long, for the duration of campaign).
Also, how do you corsair Eldar? I don't want to depict them as a human assholes with pointy ears, and I want to retain some 'alien' feel. Still, they are definitely not a dull no-fun-allowed Craftworlders, and not Commorragh sick BDSM fucks. Which personal quirks can I use?

Consider that Eldar live a long time, and Dark Eldar potentially even longer than that. A decade isn't very long at all to them.
A Dark Eldar joining a corsair crew will probably be one who doesn't enjoy the constant scheming of Archons, and is possibly a bit less insanely hedonistic, as Corsair crews tend to have a mix of Eldar from many walks of life.
I think Rangers might be an okay place to look for a baseline corsair personality. Striking out on their own path to reject a society that tells them there's only one way to do things. Of course, then you factor in the fact that the crew will be a mix of both Craftworlders, Dark Eldar, and potentially some Exodites. This means you're not only dealing with ideological differences, but differences in how they avoid the attentions of Slaanesh.
I think a good bridging point oddly enough might be Khaine. Both the Craftworlders and the Dark Eldar still respect him, and he's ingrained in each culture. With Corsairs being pirates and still focused on raiding, I could see the two sides finding common ground in the focus on martial skill. Craftworlders to find a path so as to not lose themselves, and Dark Eldar to extend their lives with the pain of others.
I would imagine honor duels being quite common, perhaps done in highly ritualistic manners befitting the old Eldar legends. Depending on the disagreement, you could either have the loser simply apologize, or have a grander series of bets and debts that create an intricate web of favors owed within a crew.
As for allowing a Dark Eldar crewmember to join a rogue trader, the biggest issue is them having to inflict pain to sustain their soul. As a corsair, it would theoretically be possible for them to acquire a soul-stone instead, though that's something to discuss with the player. If they do require pain to function, that makes them very at odds with the rest of the crew.
