My edgiest monster was a vampire who cut his arms off so he wouldn't be able to wield weapons, then his family was killed so he strapped a long blade to one and a repeating crossbow to the other stump.
Lots of leather, red, and taking 5 minute breaks to get angsty at random intervals.

Something I've been working on for myhomebrew Xenos codex I'm making for 40Kis something called a Brashta Veshtet. Veshtets are the leadership caste of the race - they're at least nine feet tall, have four arms, and are incredibly intelligent.
However, when one of them makes what is deemed a "Cursed Offense" (which I have to decide what that is), they are essentially taken away by the priest class of the race. They have their tusks chopped off at the base of their skull (hugely emasculating for them), have all of their hands cut off, are tortured for years until absolutely insane, have wicked saws and chainfists grafted to their stumps, and are then basically turned loose on the battlefield after being pumped full of combat drugs. After a battle, if they cannot be contained, they are killed by the priests in a ritual murder (ritual is super-important to them), and their skull is ground up and used as a sealant for the throne of the next Veshtet.

I think the edgiest I've made is the Fleshlight (working title). A human taken by the Dark Eldar and transformed into a mutilated searchlight cyborg, deployed alongside raiders with a phantasmal beacon that can see through any barrier, ensuring its masters' prey has no place to hide.
I'm not sure if they count, though.

I can also deflect kinetic energy. I also get psionic abilities like a psiom but I don't use points I just lose sanity slightly if I use them. Not permanent of course. Oh and all the dirtiest blessed me so I am nearly a diety already I am on a quest to become one. Edgelord

I had one in a campaign pass the party in a crystal cavern they decided to explore. The creature was just moving along his business at night while a party member was guarding. He was frightened by how large and yet decently subtle and quiet it was. The next morning I made the golem pass the group again, ignoring them again, it made the player paranoid and made him think it was stalking the group

I like my gem monsters elementally aligned or have a general theme to them
Like an obsidian golem
If you are within 20 feet of it, you gain a temporary negative level as long as you are in the area. The golem is resistant to ranged attacks, but takes 50% more damage against blunt, force and sonic damage and Spells that destroy objects deal double damage because obsidian is still brittle
Or a green topaz golem, where the golem fires crystal shards at people. If they land on the ground, they explode on the next round in a 10 foot radius, like the crystal monsters in Borderlands 2
