Why do people believe in free will? If we observe nature we see that everything is determinated by the laws of physics, biology etc. Why would humans be different?

Souls are apart from the physical world and belong to another realm that we can't comprehend. So they are not dictated by the pre-determined laws of physics or maths. This is what separates from the inanimate rocks and this is how we have consciousness.

This is actually heretical dichotomism.
The soul is material and includes the body, but the individual considered in the unity of his own consciousness has an immaterial element, referred to as spirit.

If you're going to pretend to be Catholic at least do it right.

You do have free will, it's just that you will always make the choice, that you make every time. If reality was a simulation and you rewound time and "played" that decision over and over the person would recall the same memory or instinct every time, and do the same thing.

The entire concept of "free will" means nothing, except when talking theology. It's not a relevant topic in secularism because choices are a thing you can make, but obviously they are affected by your experience, and laws of science. It is only relevant when discussing how God puts people in the situation where they will not convert over to the religion that gets them into heaven. The influence that the world puts upon them, and the fact that an omnipotent being would know from the start your choice and does nothing to change it.
