I have one of his baking books. He explains concepts and theory behind the applications/cooking procedures very well. I learned about fatty acids and shit when I was 14 thanks to his book. He's part of the reason why I chose to go into chemistry

Oh so it's fake pain, 100% fake pain. That might explain why it's used as folk medicine for ulcers. Hypothetically ulcers could be caused or exagerrated because the autonomic nervous system doesn't realize it's been scalded by acid so it won't heal. But a megadose of capsaicin in the tummy will kick the pain sensors into alarm mode and start the process again.

There's no end to the parallels. The only major difference I can think of is yield matters more in a lab than a kitchen. You can deviate more in your measurements and still cook something delicious. I'm a chem major btw. I've always said the only major difference between the lab and the kitchen is I eat the product lol.
