So I know how to do basic function composition from R → R ( essentially, f(g(x)) ), but how would you do it with more than one variable and output? Say f: R2 → R2, and g: R2 → R3, then how would you compute f ∘ g?

You wouldn't, because the domains don't match.

ex:
f(g(1))={{1}}
