Most people today who aren't retarded graduate with STEM degrees. Most people also happen to be less than "elite" or "smart". The "elite" and "smart" are those who graduate top of their class or drop out halfway/before university because they don't need a degree like everyone else to secure a shitty middle class job that everyone and their grandmothers seems to think is the best thing that could happen to someone. Note that these "smart" and "elite" kids also happen to be self-motivated and aim higher than some dead-end above average job, and those who "breeze through" their degrees are those barely above average kids who seem "elite" and "smart" in high school.

The smartest guy I know is a writer. He is very humble, drinks a fuck load, and loves cocaine. I've worked with plenty of people that are "smarter" than him; more educated, scientifically gifted, mathematically gifted, etc. But when you're around this guy, he just exudes intelligence somehow -- in a very non-pretentious, non-autistic way. STEM people are more often than not morons to me. They're impossible to talk to or hang out with (the majority at least) but just because they do triple-integrals all day and spout off elitist jargon, they're seen as more intelligent.

I think society simply views STEM people as more intelligent out of ignorance. Anyone with some sentience that understands science and math themselves will tell you that it's a trade, just like anything else.

There are a lot of employers who will give you a shot if you know the skills but don't have the degree. Some might even help you (partially) pay for getting the degree. Also, it doesn't take a degree to start a business or make it flourish. But it obviously does help. But so does having good social skills. If you graduated magna cum laude in CS and started a business but have zero social skills, you can start a business but it won't last long because, believe it or not, but your customers aren't as easy as learning a book and passing an exam.
