Depends on your play style, but I like the knight as a good beginning class. Good armor and decent shield, and the Stat layout is pretty balanced. Also, take the Master Key.

Pyromancer. It's got the best starting gear by far, and it's the only class that starts you out at SL1 which means that there will be no levels put into a stat you don't need.
PROTIP: When leveling, ignore the Resistance stat completely. It's useless.
I fucking miss DS1. It's still my favorite. I'd give up DS2 if From would just go back and give DS1 the polish it deserved.

Endgame is upgraded Giant's set + father's mask + havel's shield + demon's greataxe.

Zweihander + grass crest + giant dad is best for pvp, but I find demon's greataxe better for pve (two hit combo kills most on ng+), and the swings are more satisfying. And havel's shield makes any boss fight super relaxing, knowing you can just switch to turtling at any time.
