Some guy claims that his daughter can turn straw into gold, the king is intrigued and locks her into a dungeon full of straw, and tells her that if she can turn this straw into gold over night he will marry her. If not, she dies.
In her despair, she cries that if only someone could help her, she'd give anything for his help. A small gnomish creature appears and says he can turn ze straw into ze gold... but he needs her bracelet in return. The king is amazed and gives her another load of straw.
She calls for her gnomish ally again, he creates more gold and takes ner necklace.
More straw is delivered, for the third and final time. Marriage awaits if she succeeds again.
The gnome appears during the third night, fully aware that she is in a live-or-death situation. This time he demands her future first-born child. He also gives her a riddle: if she can guess his true name within three days, she will be able to keep her son.
She then overhears a conversation about a small man named Rumpelstiltskin living outside of town, who dances around a fire each midnight. When she calls his true name, he explodes with anger, yelling "the devil told you that!"
So Rumpelstilzchen was written down by the Brothers Grimm in the early 1800s. The Jews had lived in Germany for centuries, always involved in money, trade, and finance.
What I'm getting from this is that a woman in desperate times calls a gnomish old man for help who uses her situation to take everything she has and finally tries to transfer her debt to the next generation by claiming her son. Since straw is worthless it seems he can pretty much create gold out of thin air, like a loan. When he is called by his "true" name he is so furious that he literally explodes.
