Owner of an EOS M and I owned an X-E1 for a while too before I switched to X-T10 etc. The X-E1 is blazing fast compared to EF lenses on the M.
It's not the fastest in the world, but it's certainly fast enough, only the 1st gen lenses suffer from sluggish AF, but focus them on a vertical line if you can and it'll get there quicker. Also update firmware of the lens and the camera too.
For PP. I'd recommend you stop adding so much grain to the photos to try and hide your missed focus or possible motion blur. Also if you're using ACR/LR then you're going to need to learn to sharpen properly. It's a very capable camera in the right hands.
If you must use Lightroom and VSCO, set the camera profile to Pro Neg Hi/Standard once you've selected your preset too.
