I've always wanted to try whaling. How do I get started? Can I just go to Norway/Iceland/Japan and ask to be a part of the next whaling expedition?

Whaling is not something you should aspire to do. I've seen countless videos of it and always felt great regret that we as a species do this.
Pride that we can do it (love being top of the food chain) but pride tinged with sadness. Whales do have emotions and are self aware. They seem almost sentient, and they have enough problems with what we do to our oceans without being actively run down (swam down?) and killed.

Conservation is a fundamental /out/ principle that every outdoorsman worth his salt should adhere to. Whales are under threat and that's something to consider.
That being said, joining a hunt isn't going to mean any more whales are being killed than the hunt would already harvest, so if you want the experience you may as well. It's not for me though, it would feel morally wrong.
In my experience any boat crew is always happy to have extra hands, they will probably take you on board if you offer.
Your local Golden Corral would probably be the best place to start
