Performance wise the best is the Camaro SS/Trans-Am.
Safety wise you would be better off buying a 2005 Mustang GT. It still has 300hp which is more than enough to get into trouble, but its a newer chasis than the LS1 F-Bodies.
Another good option is the GTO. It will be quicker than the F-Bodies and the Mustang, while being as safe as the Mustang. It also has IRS which will make it handle better, less chance of spinning out when at high speed and you hit a bump.

As far as "fixing" the car, there's nothing wrong with it as a daily driver right now. it is SLOWLY consuming coolant, but not enough to cause temperature issues just yet. I plan to pull the heads and check the block, if all is well, slap on new or remachined heads (iron is as likely to crack as not crack) and continue on. She is accepting of the idea of having a safer car, she just doesn't want to look like the typical girl driving a Hyundai that can't even attach jumper cables to it, even if they could find the battery.
