Satori Boondocks is the OEM. Easiest to get in the USA through Velo Orange as the "Dajia Far". Origin 8 just started selling it as the "Gary Ergo Sweep".
It's pretty damn good offroad. High sweep and flair, low reach and drop. Lots of leverage in the drops, super stable on descents in the hooks, and the hooks are open enough that they don't pinch/pressure the way some dirt drops do. Hoods are a usable position, even though they're at a pretty extreme sideways angle.
Dislikes:
* The clamp is just barely wide enough for the stem clamp, and the tops are narrow, so if you want to tape the tops to use them as a grip area, there's basically no where to clamp a light or other accessory to the bar.
* The drops are still angled down a little more than I'd like. If I angled the bar more to flatten them out, I think the hoods would become unusable. I keep hoping the Luxy makes a comeback.

Your cheapest solution would be 22.2 diameter bullhorn bars.
22.2 is the clamp diameter for mtb brake levers. Most bullhorn bars are meant for road brake levers, which have a clamp diameter of 23.8mm, so you have to hunt for MTB size ones

No paint on the rear stays has nothing to do with the frame being Reynolds or Columbus tubing. It has everything to do with the builder and what they offered. For the very most part, polished stays and a polished front fork were options at an additional expense and tended to only be offered for higher end bikes.

Without swapping parts, you should rotate the bars up or move the hoods toi much. A little rotation is fine, but you won't have your "classic/traditional bend" handlebars and brake levers looking like a "compact drop" handlebar. The difference is classic bars have the tops as the highest point, then bend and drop a bit to the hoods, and then finish the bend further down into a flat section in the drops (the flat section of the drops is usually close to level, if not perfectly level). The hoods on these bars form a "ramp" shape on traditional bars, like a ski slope that starts at the tops.
Modern, compact handlebars are designed to have the tops and the hoods at the same height, with the tops and the "ramp" of the hoods forming a straight line. There is a sharp bend right under the hood clamp that mellows out into a gentle curve for the length of the drops area that doesn't straigten out like traditional bars would.
Older style brake hoods usually feel best when used on tradional shape bars, and modern integrated brake/shifters are shaped to be used on compact handlebars. However, there are some modern brake-only levers that are designed for comoact handlebars, and there are still modern "traditional" bend bars (see Peter Sagan's handlebars)

You can move the hoods higher as long as you can still reach the levers with 1 finger from your drop position. You can angle the bars up as long as your drop position remains comfortable. Generally pointing the bar ends at the rear brake is as far as you'd go. Your post is a little confusing. Do you want a more or less aggressive position? The saddle to bar drop is already quite minimal. If you move the hoods down the bar you will not be able to easily grip the very bottom of the lever from the drops, with your index or index and ring finger which provides best leverage for braking. If you want flat ramps - high hoods- get some nitto noodles, they are very very comfortable, strong and worth it.

I may have been a bit confusing. To shorten the reach, it will actually be rotating the bars down some and moving the hoods up a little. The hoods move a little closer to you, but get a little lower.
What I said before will bring the hoods slightly higher from the ground, but not really make the reach short.
In the end, the only REAL limitations are how effectively you can still squeeze the brakes when you rotate them, so I recommend you carefully unwrap the bars (so you can reuse the tape) and make any adjustments and ride it a little bit to test the position out before you finalize it by rewrapping the bars. As you turn the bar up or down, the brake levers also start to point up or down, which force your wrists to an awkward angle when braking from the hoods, or may even make it difficult to reach the levers from the drops. That is why you can shift the hoods a bit opposite to how you rotate the bars to mitigate these symptoms.
The changes to the reach and hood height using older style bars and hoods is quite limited compared to the same method on new bars. Most of the reach on old handlebars is in the length of the handlebar itself, and the hoods are very short, so there is no way to really shrink the handlebar reach unless you actually point them down and move the hoods closer to the tops.
Modern compact handlebars--and even Sagan's modern "traditional" bend bars--have relatively short reach compared to your true classic bars even though they are similarly shaped. That is because modern hoods are longer and flatter, so the tops and reach of modern bars got shorter. These modern proportions (along with the angle modern hoods clamp to the bar at) make shortening the reach easier.
In the end (again), there are simply limitations to how much you can adjust reach or drop on any setup without swapping to different size components

Got a WTB Wolverine in the rear now, the Rock Razor that came with the bike wasn't suitable for the wet and mossy forests I ride in. Snapped the derailleur cage off the original X0 and changed to GX 10 speed.. It's fucking incredible that you can't get replacement cages for a part that is worth like 200 €.

The sad reality is that it probably costs them like 50€ and since they can rip people off whenever they want, they just go the easy route and sell only complete parts.
So keep broken mechs as you will eventually find yourself with a perfectly good spare part that will save you from spending 200€ again.

Couple changes since last post. New tyres fitted today (went from 25mm to 28mm), flipped stem, replaced front rotor as the shitty unbranded one was noisy as fuck, and finally got a computer (Giant Axact AW9).
Whilst changing my tyres I decided to weigh my wheels as I was looking at getting a lighter set and these ones are supposedly heavy, turns out I wouldn't even be saving 100g for £150. Either these aren't stock (rims don't match and rear has silver nipples) or the reviewer was expecting way too much from a cheaper bike.

Basically because I think in BB7 only one pad moves and bends the rotor slightly to touch the other pad. I have not heard any reports that this would be a problem.
I considered hydraulics but in the end decided against them because I know how to service cable actuated brakes, but not hydraulically actuated. Also now I can transfer the brifters to a standard road bike if I ever want to.

all pistons will eventually slightly bend the rotor but it's not a huge deal, there should be enough clearance to allow for that. Worst that might be is that if you're one for completely silent bikes, that might create some slight "shhh... shhh" brake noise. At least that's my case with very cheap mechanical disc brakes, the only issue I have is that from time to time I need to adjust the brakes, but that shouldn't be such an issue with BB7's. They're actually in my mind as an eventual brakes upgrade...
But even then, pic related is my bike right now (couldn't clean it after last ride as it started raining) and it's still silent enough that when I was coming back from the ride people wouldn't hear me coming up.

Unless you're running drop bars or some other unusual setup just get hydros, for flat bars the price difference is tiny for low end hydros (which will be better than even BB7s).

I'd get them for the extra adjustability over my current tektros, I don't feel the need to 1-finger brake (my current brakes stop the bike easily with two fingers.) and I like the adjustability on the field, I don't want to have to mess with hydraulics (I know it's not a huge deal, but I don't want to go to a bike shop if I can help it, and mechanical disk brakes are really easy to work on - I don't see the benefit of hydraulics except for better brake modulation.)

Trust me, the better modulation with hydros is absolutely worth it. It's not about having more power but being able to get the same braking force with less effort, with just one finger (which means an extra finger round the grips giving more control) you can vary the force precisely without tiring your hands out.
Also whilst they're a bit more work for the initial setup (if they don't come already filled and bled) they don't require as much maintenance and adjustments as cable brakes, they automatically adjust as the pad wears and when you put new pads in and alignment doesn't need to be quite as precise.
I've got BB5s at the moment (the white bike a few posts back) and they okay, but if I keep my flat bars I'm going to swap them out for some hydros like on all my mountain bikes.

Idk, I got a SRAM X5 shifter and that is really comfortable, I'm only using my thumb, so using two fingers to brake doesn't really put me at a discomfort in any way. I never accused any hand/wrist fatigue. I'll try out hydros on the trail at the first chance I get, but so far I'm not really seeing the benefits for a non-racer.
They'll be an upgrade really far down the line anyways, probably when the wheels or rotors are shot... I've been riding often only for like 3 months, improving steadily and right now what I really need is a set of good flat pedals.

It's not just you. I would say the front is 140mm and the rear 160mm. I'm not sure how mounting works with 140mm discs (as post mount and IS are 160mm natively), my best guess would be it uses shorter posts hence the rear being stuck with 160.

It might depend on the size of your hands, if you've got longer fingers your ring and pinky might have a bit more grip round the bar. Also I've got a fucked up pinky finger on my right hand (broke it in a crash) which doesn't help my grip strength when it's just two fingers holding on.

If I don't get drop bars (looking less likely the more I ride this bike) I might get some bar ends and a slightly shorter stem, never been a fan of ergo grips.
I was after some 32s but the store only had 35s. These were cheap enough that I don't mind switching if I don't like them. I've only taken them on a 5 minute ride but they seem a fair bit comfier than the 25s.

My hands are a bit weird yeah, long and thin fingers, so they all sit tight on the bar and I can easily reach the levers without discomfort. Might be that, too. But as I've never tried hydros, it might also be that I am retarded and I've never experienced that sort of braking efficiency - all I can say is that so far my 160mm front and rear tektros have stopped me really well bot on and offroad, with no discomfort or times where I felt "I was close to crashing because of the brakes".
Also I weight just barely 60kg so there's very little mass to stop, that might help too.
I will post pics of my bloody self if I do end up on the rocks, though!

I'm gonna thoroughly disagree. BB7s are way better than low-end hydro shit. I'm looking at entry level tektros and avids. Low-end shimanos perform decently, but unless you intend to go for some mid-tier or high-tier hydros, the BB7s are a perfectly fine option.

I can only speak from my experience with Shimano. The lowest end ones I run are the M445/6 and they're better in every way than my BB5s and can be had for less money than BB7s. More power, better modulation, more and better pad choices, and easier to set up.
My BB5s don't even have a consistent feel, the rear feels like turd due to the longer cable and an awkward bend just before the caliper, an issue you don't get with hydros. This is after fucking around for ages getting them set up the best I can, and then as the pads wear I'll have to keep adjusting them and then start all over again when I replace the pads.

I'd say adequate, in the sense that they can stop the bike if needed. If they come stock on a bike or hydros aren't an option (using drop bars for example and have a low budget) then fine, but as an upgrade choice they're pretty dumb.

If you want discs and you don't want to deal with hydraulic, go with the TRP Spyre/Spyke brakes. They're dual piston, less finicky to set up and easier to adjust, and not much more expensive than the BB7s. They use Shimano pads, so you'll always be able to find parts.
To everyone trying to sell hydro discs: Yes, hydro discs are great (I have them on half my bikes), but mechanical discs are still SO MUCH BETTER than the brakes of 10 years ago; they're way more than adequate.

I'm not saying that would be my personal choice, just that for some people weight is a reason for running smaller discs. Other reasons I forgot to mention are greater forces acting on the fork (could either cause damage or eject the wheel from the dropouts), aerodynamics, and clearance issues. If these didn't exist then of course everyone would be running 203mm discs.
