Song and Dance Man III: The Art of Bob Dylan is the most informative, but it's not just about Dylan, it pays tribute to a hefty amount of his influences. Be warned, it's basically a college-sized textbook.

The Old Weird America is kind of a condensed version of what I just described focusing on The Basement Tapes. It's kind of out there, the writer has a little bit of an overactive imagination but I enjoyed it.

Clinton Heylin's books are good. Their names are escaping me at the bottom, but one's a biography and probably the most in-depth biography and the other two are a chronicle of the songwriting process for all the songs he'd written up until 2009.
