Illinois is his most symphonic and elaborate work. Michigan is good as well but is basically a less ambitious and overall weaker version of the album.
Age of Adz is a schizophrenic piece that mashes folk and electronic/industrial sounds together. That's a lot of what he's performing now but it works much better on the album, some genuinely incredible deep cuts there.
Carrie & Lowell as well as Seven Swans are stripped down folk albums, both are pretty emotional and depressing.
Then he has some outliers like the BQE which is this weird classical sort of thing, and Enjoy Your Rabbit which is abrasive electronics.
So start with Illinois or Age of Adz.

If you end up liking it, I would recommend listening to all of his studio albums Michigan-C&L. There are only 4 others apart from Illinoise so its not exactly tough work. If you still wanna explore then you can dig into the deeper stuff.
