The performers have sheet music they read, they don't benefit from having a conductor at all.

Obviously you haven't tried to perform in any way without a conductor.
Shit goes awry, particularly the tempo, quickly. And there's no one to correct it.

conductor has the best overall balance of the orchestra and can alter dynamics and minor details to make sure the work shines.
conductor can take minor artistic liberties like tempo and feeling, and certainly a conductors personality and instructions changes the sound of an orchestra (this is not disputed btw, dont be a fagget and question it)
conductors also know the piece inside out and hopefully understand the composers intentions with the piece, and can make sure the performance lives up to it.
Conductors keep the time throughout the piece, so any player can see where in the bar the piece is at any specific time
Conductor cues in players that have had to wait for a long period
Conductor makes sure time signature changes and tempo changes are correct.
Dont expect to understand things you know nothing about. Go do some research on your own if you dont know something. Dont bug us with your ignorant questions.

pop, rock, jazz, etc. usually have a drummer, and thus everyone feels the same time.
without drums, it's quite hard to get a huuuuge group of people playing together to get the timing right, even with sheet.

the musicians in an orchestra are responsible for knowing their part
the conductor is responsible for knowing every part, plus the history and context of the piece to bring them all together and create a great performance.
They direct the tempo, the mood, the interpretation and everything else through the rehearsals and performance.
