I don't know how it is with other Eastern European country, but in Polish culture there wasn't a gryphon and that's why nobody there even thought about choosing the gryphon. That's the one thing.
The other thing is that usually gryphons are taken as confident animals nobody can get on their heads. Not like ponies, who were ruled by Discord and like Crystal Ponies ruled by Sombra. Unfortunately, Poland is always under somebody. Under Prussia, under Russia, under III Reich, now under European Union ruled by Germany... Poland is more like Crystal Ponies and Germany are more like King Sombra.
