So how would you go about creating edits like these? What software do you need? Does it take forever to do? How much of a newfag to art can you be to make a simple edit?

Basically, anything with an stabilizer (or a steady hand).
Personally, I'll recommend looking at pre-existing edits, and take cues from those.
And it usually takes me around an hour or two for each individual character, but I don't sketch before hand, so there's that.

Photoshop, Gimp, Krita. Pretty much any layered pen tool art program would probably work. Some edits are easier than others, depending on the pose. I tend to open a nude model from Google and make a similar-looking thing over the clothing of the original image. Then, I fill it in and re-create the background at the edges. Soft tools sometimes necessary for gradient backgrounds, and nipple aureoles are a little blurry at their edges. It's a trial and error thing at that point, refining details and whatnot.
I always wondered how good some editors in here are. Because some sits are pretty hefty, can you actually replicate an artists style well enough to e.g. make a whole picture looking like the style from scratch?

I think you might be blaming your own misconceptions of anatomy on the wrong thing. That billowy shirt does make Octavia's body outline hard to gauge, but it's no excuse for poor anatomy on this level.
I also noticed that the shoulder looks really odd. It's too far forward and too far down. The back looks like we should be viewing it from an angle that's further to the left than the shot actually is, when it fact (reviewing the original image) we should be looking at the body slightly from the front with little to no back visible at all. The breasts as well look strange. I think again this comes from you misjudging the angle that Octavia's body is meant to be at.
Overall here I think you just misinterpreted what was going on in the image. If you feel like fixing this you're probably going to have to start from scratch, if you feel like it at all.

Well if you want some vague reference of how the body should look from this angle, have this shitty mspaint-y thing.
If I'm correct, then you should be seeing the breasts slightly from the front, like so. Just enough to see both of them, with the far one slightly obscured behind the front one.
The torso slowly turns to the side as you descend, eventually resulting in the hips actually being viewed from the side. I think that's what threw you off there: Her hips seem a lot more straightened than the rest of her anatomy, making it look as if she's facing sideways.
There is actually a bit of a leg derp here, I will agree with you on that one. The far one looks way too thick compared to the one in the foreground, so I've proposed a point where it can be thinned down to appear more symmetrical.
