They used to. But now it's more about selling CDs, rather than having an iconic theme song. Although even when some songs sound like generic jpop/rock, their lyrics do relate to the show.

Because /m/ anime back then was aimed at kids and songs like that are still used today to hype them up, just look at most toyetic kids openings (I mean say what you will about Pokemon but their OPs are pretty much always full of energy). But mainly it's a product of the times thing.

Old anime openings were all about the audience cheering on the hero in the form of a song, lending their voice to grant them courage. You used to have directors themselves pen these lyrics as a part of that plus they got royalty checks for said songs. Things changed in the 80s when the music industry finally twigged you could use anime to launch the careers of up and coming bands with something that was not only catchy but had cross audience appeal. Hence the shift from stuff like STAND UP BRAVE WARRIORS to more regular poppy stuff. Contrast the openings of Dunbine and Zeta Gundam, made three years apart, and you can see the divide. The traditional hero song style is still around in anime, though it's usually limited to shows aimed specifically at kids, parodies of said shows in other series, or in remakes of those age old properties. Otherwise it's usually standard contemporary music.

I mostly watch kids shows nowadays, so I'm not that familiar with a lot of theme songs for current adult shows. Although the few I watch (JoJo, mostly) are hype as hell.
My current favorites are the Youkai Watch OPs, that always consist of a guy doing an Engrish rap about hanging out with your buddies and going to school, random nonsense word chorus, then switching to a sad girl singing about crows flying at sunset and lost love, then back to rapping guy screaming his lungs out about fireworks and sunny weather over Japan. It's great, and has jack shit to do with the show.

All /m/ anime was targetted at kids back then even if it was some dark shit like Zambot 3, anything that sold merchandising was totally kids based with some exceptions like Votoms because they were things that were meant for all ages to enjoy. That's why the only mecha anime these days are the late night solely otaku-based ones unless it's Gundam

To be honest, I prefer some opening like, say, Rayearth, talking about self doubt and the such (although generic it applies to the main character) rather than the whole plot summarized in a few lines (like "Autobots fight the evil Decepticons"); this last one is quite retarded. Even in Dragon Ball Z, for instance, which is quite related to the series, they don't say "go, Goku, defeat the evil Freezer and save the Universe", but something like "the Genkidama roars as loud as my heart pounds", that's fucking awesome.

Also, there's another huge difference. Even when the song is related to the series, in American songs it's more about "here's this character and here's the enemy, watch them clash". While the Japanese lyrics are more in the lines of "this is a series about fighting, feel as if you were fighting yourself". The American one is quite distant and treats you as a cheerleader; the Japanese one tries to include you and make you feel as if you were part of the cast yourself.

American theme songs are generally just the name of the show repeated over and over, or a simplistic description of the show's plot, like:

No. That's no rule at all. Many anime, perhaps most of them (back in those times at least), had the lyrics below. It didn't matter if it were aimed for kids (Chibi Maruko Chan, Doraemon, Heidi), for preteens (Sailor Moon, Dragon Ball), for teens (Dragon Ball Z, Macross, Hokuto no Ken) or for adults (Space Adventure Cobra, Devilman). Macross is mostly for teenagers about to finish school and young adults getting into college/work. You don't make Macross for 11 years old preteens. They are welcome to watch it, of course, but it's not a story written with them in mind.

SJ is for a range of readers between 8 and 18, and I don't think that something as violent as HnK aims for the younger kids of that audience. It's clearly for teenagers.

Cobra and Devilman shounen? Maybe Devilman, at least the first version (although it was mostly a story for adults trying to be marketed for teenage viewers), definitively not the OVAs. But Cobra? Are you fucking high?
No kidding about the others, you brainbox! Both Shounen and Shoujo are mostly for preteens and teens up to the point when they are leaving highschool. Sailor Moon earlier Seasons are mostly for preteens, later Seasons are for teens; same happens with Dragon Ball (Z being for teens).
When unsure, the most clear indication of the target is usually (USUALLY, that means NOT ALWAYS, so please don't come with some idiotic retort such as "but I know a manga/anime where it doesn't happen") about the same age as the protagonists. Macross main characters are all teenagers that find themselves in a time of war; it's, among many other things, about first, idealized, infatuated love and it's transition to a real, conscious love. Also an epic about death and destruction. It's clearly for older teenagers, it's even stated everywhere that it's a shounen.

The only thing I remember of the Cosmocats (silly French translating Thundercats) is the awful French lyrics. The tune was great, but the words were so fucking retarded.

After hearing the French openings to Maison Ikkoku and Robotech (this one was utterly ridiculous) you want to shoot yourself in the head.
Space Adventure Cobra though, this one had a great French opening theme.

Isao Sasaki says himself that even when he started doing anime, his style of music was getting old. And anime allowed him to keep singing the way he liked and felt music.
In any case, both Ichiro Mizuki and Mitsuko Horie were great singers as well. They were usually good enough pro singers that didn't have a lot of success or started that kind of "enka-flavored" music with some Elvis mix too late. Anime allowed them to have success even when their style was a long forgotten memory (heck, they even had many works in the early 80s). JAM Project was not only a way to get more work again, but also to modernize a little bit their style to be trendy again.
