What arms, armor, designs, colors, and lore about mobile suits do it for you?
I'll start us off with piledriver arms. Never really done as well as Big O, but if I ever designed a mecha I promise you it would have this awesome feature.

I can't think of anything that's 4/4 on those. Optimus Primal is as close as I can get with retractable mouth plate, arms that turn into weapons, and gorilla theme.

Tallgeese III is EW only so it's easy to discount if you don't like it.

The Gouf uses a heat blade, but often pilots won't switch it on. Seemingly to conserve power. I'd guess it makes it less effective so you have to be more skilled and apply the blade where it will hurt.

I don't know if this is a feature or more of an effect, but:
Depictions of mecha where their structure behaves like a large thing made of metal and parts instead of a rigid massless statue. Limbs and parts juddering as they reach their full travel, metal frames wobbling with each step or sudden change in movement.
Pic related for a good example; another one I can think of are the animations for ACs in Armored Core V and Verdict Day. Especially the weapon arm transformations: those really look nice.
