Char's design is not because it's sensible; it just marks him out as the "important mysterious antagonist of the evil side."
The fact that UC and Gundam in general became vaguely more realistic and real robots is because Tomino was right about the relative direction of Gundam's setting and the fact that it actually became popular.
MSG is a glorified toy commercial with cliche trope characters designed to appeal to teens because sponsors wanted it that way.
