All I know of gundam is what I remember from watching sporadic episodes as a kid.

What order should I watch the series in to get as much lore/understanding as possible, while avoiding bad 80's animation as long as possible?

(please help me begin navigating the spiderweb of series)

This. G-Saviour is probably the best point to get into the main UC timeline and compared to the older cartoons it holds up well.

After that move onto SEED, it's the best AU series by far, and it'll move you nicely into stuff like Build Fighters Try which can be a bit deep and complex if you haven't watched a whole lot of Gundam previously.

I have a counter.

I'm not asking what order I should watch episodes in, nor what seasons I should watch. Series are not the same as seasons.
Series changes often involve a completely differnt feeling/direction and sometimes modified chronological order or something can be better/best.
Which is why I'm asking what would be best given the qualifier that I want to avoid 80's animation as long as possible, while getting max understanding of lore.

And even if they really did look like shit, I can't imagine being shallow enough to actively avoid good series because of it.

Don't watch big fighting robot anime then. Watch A/Z or Valvrave from this year and last, they're both solid replacements for Gundam and I'm sure their animation will be up to your standards.
