I'd go with a mix. (as long as you understand the animation will variate tremendously because of decades difference)
The UC stuff should be generally watched in chronological order. Sprinkle the OVAs in as they come up. (I'm one of the few people on this board that actually thinks Zeta is made better by watching 0083 first)

I've watched them both ways and honestly I think you get more out of watching it in chronological order. 0083 has more of an impact when you watch Zeta after and go 'OH, THERE'S THAT GUY'. Plus you don't have to wait for Zeta's slow ass exposition to piece together what the fuck happened from 0079 to Zeta.
Plus the 08th MS team -> 0080 -> 0083 movie night is always comfy as fuck.

Zeta (the series, trilogy is not canon)

Origin is still in production, you can watch it after MSG whenever you want, really.

Watch turn A after all that, some alternate universe familiarity is recommended before as well.

The problem with it that the first half is much more comical than usual.
Again, that wouldn't be a problem, until you consider how serious the last parts of Zeta were, especially with all the deaths.
The second half is pretty good.
Also, despite Char and Amuro not being in ZZ, there are still bits of information needed to get the full experience of CCA.

Zeta also has great pacing IMO. Not really a show i'd drag out as i usually do with 50-ish episode anime.

There is some tonal whiplash but honestly after Zeta I needed something a bit lighter.

I started with 0079 and I'm going to watch all the series in chronological order.
Also, I didn't expect 0079 to be THIS good! I always despised those old animations etc, but after 2 or 3 episodes you get accustomed to them, and you can enjoy the story and the dialogues. Yes, I'm really liking the characters. Especially Amuro

Except in Zeta those guys have major roles while they have cameos in 0083. Watching 0083 first could mean that you most likley don't pay attention to some of them and the cameo is sorta pointless then. 0083 is a prequel. It's intended to be watched after Zeta to sort of give more detail to the events that led to the rise of the Titans etc.
