I am a scrub when it comes to selecting mecha anime, but thus far I have seen Big O, Gurren Lagann, Code Geass and Gasaraki.
They were all pretty good, but are there more shows that have a military conflict involving mechas going on? I think that was my favorite part of Gasaraki and to a lesser extent Code Geass. I know Gundam has this but I honestly wouldn't know where to start with that huge franchise.

Otherwise, you should also try Patlabor. It doesn't have the military conflict that you seek in most of the entries, but I think you might enjoy mecha in a more slower paced, semi-SoL setting. It has two "continuities"

You can watch the movies whenever and in whatever order though, just make sure to watch the New Files OVAs after the TV series.
If you enjoy Patlabor you should also then try Dai-Guard, it's more in the same vein, along with Irresponsible Captain Tylor(doesn't really have mecha in it per se, save for the Marines' power armour, but sci-fi shows with lots of spaceships in them are usually regarded as belonging on /m/ to some extent). (And on that note, I would also recommend Legend of the Galactic Heroes. Again, no real mecha, but it's possibly the longest military conflict/war/political anime out there with great characters, that go into a high amount of detail and has reasonably exciting space battles, regardless of what semi-circle memes people may spout at you)

Dougram and VOTOMs may be enjoyable for you.
Macross is the other big military mecha juggernaut franchise, but it's much simpler to watch than Gundam. Much fewer in terms of entries.
Super Dimension Fortress->Plus->7->Frontier->Delta
Everything else can be watched at any point after having seen SDF.

Dougram is literally Guerrilla Warfare: The Anime for most of the show. Not even joking, there's actually a small arc when the protagonist group and the other guerrilla groups reform into an actual organization rather than a bunch of bands of independent fighters.
