The most obvious use for a centaur is carrying ammo and heavy equipment. Ammo is heavy and having someone that could carry the infantries MG/mortar ammo, batteries and extraneous bullshit would be a significant boon.
Of course officers would find some other ways to overload the infantry anyway, replacing 5.56 and 7.62 with 7.62 and 12.7 or something equally dumb.

Let me attack this from a scientific and logistics standpoint.
The scientific:
So assuming the Centaur uses a hind gut fermentation gastric system like a horse to support it's large frame, it is going to require high quality forage (carefully grown and harvested hay, certain grasses, certain legumes) and supplemental protein and minerals (soy/corn/mineral/fat mixed ration). Both of these are expensive and difficult to source outside the US.
Logistical:
A safe (very low) estimate for how much forage and mixed ration a working horse needs in a day is about 15-25 pounds of HIGH QUALITY forage and 5 pounds of mixed ration. If we consider the energy necessary to run the human brain, we can imagine they'll need at least double the mixed ration to get the fat and protein just for energy of maintenance.
Therefore, a squad of 6 centaurs would need, at the absolute minimum, 180 pounds of food per day. If they went on a 3 day patrol, they would need to carry with them 540 pounds of food. 360 pounds of which would an in the form of 4 or 5 square bales of hay that are extremely flammable and ruin overnight if they get wet.

It's a multimillion dollar industry already. The best you can do is dehydrated alfalfa cubes but they have significantly less nutritive value than regular forage and it would be near impossible to meet the maintenance requirement for a horse with just those and ration.
You must also realize that removing water from feedstufs means you must add that water back by increasing their water ration for the day, which is already over 10 gallons per animal. Remember that math in my last post? Water for 6 horses for 72 hours would weigh 1440 pounds. So were at a literal, 2000 pound, ton of just food and water.

You're looking at this in the completely wrong way. Centaurs would have been a significant part of the military for thousands of years, only stopping being in widespread mainline use roughly a hundred years ago. Hell, right up until WW2, the US still believed horse cavalry would be relevant. They were even used to decent effect in the Philippines. Centaurs would be very entrenched in the military. And we all know that the brass doesn't always make rational decisions, especially when it affects them or the things they like and/or identify with. Thus, centaurs would likely have always been in the military.

Would centaurs really be a minority for identity-politics liberals to latch onto and feel oppressed on behalf of, though? Centaurs are a central part of Western civilisation and form a key part of the myths of Greece from which we derive so much of our culture. I'd anticipate that they'd have a prominent if not privileged position in society.

Centaurs held a very odd position in Greek Mythology. Either they were some pretty great sages and healers who were bro-tier, or they were very aggressive and were known to be out of control rapists. I could honestly see it going either way, in that they'd be another minority for libs to use as identity politics, or be seen as proud western beings.
For military use...what can they really do that we cannot? Maybe better at being scouting? I wouldn't really know, never was in the military. They may have better hearing and a wider field a vision that could help.

How would you armour a minotaur enough to be more useful than normal human infantry? Even if it's strong enough to carry full body armour capable of resisting .50 rounds it won't be anywhere near the levels of protection tanks get.
