Two things.
1. Traditionally the west and interior were big on lamb, the mountains of the east and centre were always beef eaters.
2. Now that it's more abundant most people prefer beef, even in previously lamb-cominated areas, lamb is still big in the rural hauts plateaux (msila, djelfa, tiaret...) and some desertic places.
