Actually they were awful veggies - I made it with yellow squash (garbage tier veg), zucchini (dildo tier veg), and eggplant (tasteless mass tier veg), along with the tomatoes/onions etc

It wasn't the most traditional considering the flavors of the produce didn't shine through, but I got out what I put in

I mostly just hate yellow squash
It's served in lots of school cafeterias here because it's so cheap, and I associate it with industrial/institutional food now

I used a mandoline for small slices at first but then I got lazy halfway through
