Shonen isn't even a genre to begin with, it's a demographic. It's natural that a lot of shonen mangas will seem dumb to an adult, but there are a lot of hidden gems out there. That new Boku no Hero Academia is pretty good, don't you think? Also, I usually end up disliking "mainstream" stuff, but One Piece and HxH really have a certain charm, and they pretty much fit the formula you described.
