In my state we had very distinct neighborhoods, ones that were Irish, Italian, Armenian, Portuguese, etc. This communities had strong identities and not a lot of diversity and would frequently fight with each other. So I think this is part of why people identify with their heritage in America.

There's ethnicity and there's citizenship. Citizenship is irrelevant and is basically a contract you have with some state. Ethnicity is something you inherit from your parents. For men in the Balkans, traditionally, you are what your father was. Eventually, you can choose to adopt a different ethnicity and this is/was often done by changing your name and learning the language and culture of your new nation. "Ethnic heritage" is a meme concept.
Also, Americans are an ethnic group now, it's been long enough. Every relevant ethnic group is a mixture of previous ethnic groups.

I think it's because we are the New World, the only people who used to live here were the natives and they didn't composed a nation. If you say that you are "100% ethnicity american", you are basically saying that you are 100% descendent from the people who lived in actual USA territory.
Since the New World were colonized by British, Spanish, Portuguese, French and Dutch people and had tons of slaves from Africa, and later, received a lot of immigrants from Europe and Asia, it's pretty logical a person from the Americas "advertising" about he's heritage. We don't have a specific ethnic identity, since the natives are almost extinct.
My father, for example, is 100% of italian ethnicity, since he's family didn't mix with other ethnic groups. Therefore, I'm literally 1/2 italian. If I say I'm only brazilian, it's very vague, because it absolutely says nothing about my origin. It works in european, asian and african nations, because they actually have an original majority ethnic, different from us.
