You can do that everywhere I guess. I would skip Barcelona if you are looking in Spain. The northern coast in Spain is pretty comfy and not that hot in summer. Galicia and Asturias are top tier choices with God tier food,and the people are very friendly,but you may have a problem with the language. I am sure that French anons,Italian and Greek anons could recomend you great places too

Well if you want to go to the med skip Malaga,Marbella and levante at all costs. Girona is a pretty interesting place. You have old volcanoes,Gerona that is quite a beautiful city and lots of qt villages. There are also gorgeous small beaches and fewer tourists than in Barcelona. But it is quite hot. You also can spend some days in mountain places and hike,as you are pretty close to the Pyrenees,pic is a view from the pyrenees (sorry for the quality).

In summer the central regions are like an oven. Lots of things to see there,but summer is hell,even for locals. The south is great for doing tourism,but temperatures reaches 40 degrees some times,and some places are too touristic. The north is pretty comfy,both Gerona and the western provinces like the basque Country or Galicia. Nice food,nice people and cooler weather.

Barcelona and Madrid are expensive. The Basque country too. The rest shouldnt be expensive. Probably the cheapest western country behind Portugal,another interesting option. The north is comfier on summer. Fewer people an cooler weather. But Gerona is a great option,is just warmer. Check Asturias for example Oviedo and Covandonga are great places. Just look things in Asturias,Galicia or the Basque gountry and ask me anything. If you go north you should visit San Sebastián
